Taste of the South: Sweet Potato Poundcake

The Thanksgiving season brings with it lots of great eats and treats. Â Jeff Sanders decided to head into the kitchen to learn how to cook up some great southern Thanksgiving dishes. Â This week Jeff is satisfying his sweet tooth. Â He’s baking up a sweet potato poundcake with the good folks at the Must Stop Cafe in Wetumpka.
Here’s the recipe:
SWEET POTATO POUNDCAKE
1 cup butter (softened)
2 cups sugar
2 cups cooked and mashed sweet potatoes
1 tsp vanilla extract
4 eggs
3 cups all purpose flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp salt
Beat eggs well, and sugar, butter (mixing well in between), add vanilla. Sift together all dry ingredients. Add, rotating one cup dry mixture, sweet potato, one cup at a time. Pour into greased and flour bundt pan.  Bake on 350 for 1 hour or until toothpick comes out clean.  Remove from pan, let cool, then add your favorite glaze or icing.
